A Good Time Was Had By All

The Christmas party at Denise and Greg's was a lot of fun. Erika asked me to post the recipe for Hot Artichoke Dip.



I've only made this twice using many versions I found on the internet. The proportions of cheese to artichokes to mayo vary greatly. There is some debate about whether the artichokes should be the more expensive marinated artichokes in a glass jar or the cheaper artichokes in a can. I have no opinion here, just make sure you drain them. Some people add chopped green peppers, others the canned green chiles found in the mexican section of the grocery store.



1 cup mayonnaise
1 cup grated parmesan cheese
12 ounces (give or take) or artichoke hearts chopped roughly
1 to 2 cups shredded mozzarella cheese
1 and 1/2 tsp. garlic powder
1 small can of chopped green chiles (optional)
1 tsp paprika (optional)

1. Preheat oven to 350 degrees.
2. In large bowl thoroughly mix all ingredients except paprika.
3. Transfer to an 8x8 inch baking dish.
4. Bake 30 or 40 minutes until bubbly and the surface begins to brown.
5. Sprinkle with paprika and serve warm.
